Our head chef and co-owner, Bilarddi Carteli, was trained in Italy (Bologna and Tuscany) as well as in California. Bilarddi worked as a chef throughout Italy as well as in the United States. He follows the methodology of Professor Pellegrino Artusi, known as the food god of Italy, believing it’s not the recipe that makes a meal delicious; but, the imagination that combines the ingredients.
Chef Carteli personally designs and prepares our daily off-the-menu classic Italian specials taking into account what fresh ingredients are available from the market. Our professional waiters will share our specials with you in details.
Morino Panelli, our wine expert and co-owner, has over 40 years of experience in the wine and food industry as well as being a wine judge. He will visit each table and provide expert advice on pairing the perfect wine(s) with the selected meals.
Our Head Server, Michael Angelo, was professionally trained in Italy and has over 25 years of restaurant experience.
Many of the kitchen staff have been a part of Chef Carteli’s team for the past 18 years.
